The quick recipe for Pavese soup
Lombard soup ingredients for 4 people:
- 1 liter of meat broth (from our Bollito or Lesso Box)
- 1 slice of homemade bread each
- 1 egg each
- 30 g of butter
- Grated cheese (preferably Grana Padano) to taste
- Salt and Pepper To Taste
Preparation of bread and broth soup recipe:
Prepare a good meat broth based on cuts of beef and poultry. If you are not using it immediately or have prepared it previously, heat the beef broth in the pot.
In the meantime, toast the slices of bread in a pan with some butter and place them on the bottom of a saucepan or a serving dish - preferably terracotta.
Crack an egg onto each slice of bread on each plate. Pour the hot broth as soon as it is ready over the eggs and bread.
Add a generous sprinkling of grated cheese and a pat of butter on each egg.
For an extra gratin touch: bake in the oven until the eggs are just cooked.
Or, serve hot, with a final sprinkling of salt and pepper.
