6 Recipes with Meat and Zucchini: the Taste of Simplicity

Zucchini is a versatile ingredient that lends itself to different preparations, and when combined with meat they create delicious and tasty dishes. In this article, we offer you 6 recipes with meat and zucchini, perfect for a lunch or dinner with family or friends.

1. Minced meat and courgette rolls

A second course with minced meat and courgettes, simple and quick to prepare, ideal for a light dinner.

Ingredients:

  • 500g organic minced meat
  • 6 courgettes
  • 100 g of breadcrumbs
  • 50 g of grated Parmesan cheese
  • 2 eggs
  • Chopped parsley
  • Salt and pepper to taste
  • Extra virgin olive oil

Preparation:

Wash the courgettes and grate 1 coarsely. The others, we must cut into very thin slices with the mandolin.

In a large bowl, mix the ground meat, grated courgettes, breadcrumbs, Parmesan, eggs, chopped parsley, salt and pepper.

Form rolls with the courgettes cut into slices and add the filling with the mixture obtained and cook them in a pan with a drizzle of oil for about 15 minutes, turning them from time to time.

2. Baked meat and zucchini meatballs

A tasty alternative to classic meatballs, served with a side of baked potatoes or a fresh salad.

Ingredients:

  • 400 g minced meat
  • 2 courgettes
  • 1 egg
  • 50 g of breadcrumbs
  • 50 g of grated Parmesan cheese
  • Chopped parsley
  • Salt and pepper to taste
  • Extra virgin olive oil

Preparation:

Wash the courgettes and grate them coarsely.

In a large bowl, mix the ground meat, grated courgettes, egg, breadcrumbs, Parmesan, chopped parsley, salt and pepper.

Form meatballs with the mixture and place them on a baking tray lined with baking paper.

Cook in a preheated oven at 180°C for approximately 20 minutes, turning the meatballs halfway through cooking.

3. Beef and zucchini burger

A gourmet sandwich with excellent meat to enjoy in company, perfect for a barbecue evening or an outdoor picnic.

Ingredients:

  • 400 g minced meat
  • 1 courgette
  • 1 onion
  • 1 clove of garlic
  • Hamburger bun
  • Tomato - Salad - Cheddar
  • Barbecue sauce (optional)
  • Salt and pepper to taste
  • Extra virgin olive oil

Preparation:

Wash the courgette and grate it coarsely. Finely chop the onion and garlic.

In a large bowl, mix the ground beef, grated zucchini, chopped onion, minced garlic, salt and pepper.

Form the mixture into burgers and cook them on a very hot grill for a few minutes on each side, until golden brown.

Assemble the sandwiches with the bread, burgers, tomato, lettuce, cheddar and barbecue sauce (if desired).

4. Meat stew with courgettes and tomato

A rich and tasty one-dish meal, perfect for a dinner with family or friends.

Ingredients:

  • 500 g of meat stew (beef or pork)
  • 2 courgettes
  • 400 g of peeled tomatoes
  • 1 onion
  • 1 clove of garlic
  • Fresh basil
  • Extra virgin olive oil
  • Salt and pepper to taste

Preparation:

Wash the courgettes and cut them into pieces. Finely chop the onion and garlic.

In a large saucepan, heat the extra virgin olive oil and sauté the onion and garlic.

Add the meat stew and brown for a few minutes. Add the diced zucchini and cook for about 5 minutes.

Add the peeled tomatoes, fresh basil, salt and pepper.

Cover with a lid and simmer for about 45 minutes, stirring occasionally.

5. Meat and courgette fritters

Everyone loves fried food and - as they say - everything is good fried! Here we are joining the frying movement with some tasty fritters with meat and zucchini. If you want to stay lighter you can use the air fryer.

Ingredients:

  • 300 g minced meat
  • 1 courgette
  • 1 onion
  • 1 clove of garlic
  • 1 egg
  • 50 g of breadcrumbs
  • Chopped parsley
  • Salt and pepper to taste
  • Oil for frying

Preparation:

Wash the courgette and grate it coarsely. Finely chop the onion and garlic.

In a large bowl, mix together the ground beef, grated zucchini, chopped onion, minced garlic, egg, breadcrumbs, chopped parsley, salt and pepper.

Form fritters with the mixture and fry them in boiling oil for a few minutes on each side, until golden brown.

Drain the fritters on absorbent paper and serve hot.

6. Meat and courgette lasagna

Less quick than the other dishes presented previously but a rich and tasty first course, which will conquer all palates.

Zucchini and meat lasagna ingredients:

For the pasta:

  • 250 g of 00 flour
  • 3 eggs
  • Salt to taste

For the ragù:

  • 400 g minced meat
  • 2 courgettes
  • 1 onion
  • 1 clove of garlic
  • 400 g of peeled tomatoes
  • Fresh basil
  • Extra virgin olive oil
  • Salt and pepper to taste

For the béchamel sauce:

  • 500 ml of milk
  • 50 g of butter
  • 50 g of 00 flour
  • Nutmeg to taste
  • Salt and pepper to taste

Preparation:

Prepare the dough : in a large bowl, arrange the flour in a fountain shape and add the eggs and a pinch of salt. Knead until the mixture is smooth and homogeneous. Let the dough rest for 30 minutes.

Prepare the ragù : wash the courgettes and cut them into cubes. Finely chop the onion and garlic. In a large pot, heat the extra virgin olive oil and fry the onion and garlic. Add the minced meat and brown for a few minutes. Add the courgettes cut into cubes and cook for about 5 minutes. Add the peeled tomatoes, fresh basil, salt and pepper. Cover with a lid and cook over low heat for about 45 minutes, stirring occasionally.

Prepare the béchamel : In a saucepan, melt the butter over low heat. Add the flour and stir until the mixture is smooth. Add the milk little by little, stirring constantly with a whisk. Cook over low heat for about 15 minutes, stirring often, until the béchamel is thick and creamy. Add a pinch of nutmeg, salt and pepper.

Roll out the pasta into thin sheets. In a baking dish, arrange a layer of pasta, then a layer of ragù and a layer of béchamel. Repeat the layers until all the ingredients are used up. Finish with a layer of béchamel.

Bake in a preheated oven at 180°C for approximately 30 minutes, or until the surface is golden brown.
