The Italian Republic Day, celebrated every year on June 2, is an occasion to celebrate the values ​​of democracy, freedom and equality that are the foundation of our nation.

To celebrate the Republic Day in the best possible way, why not propose a menu based on typical Italian dishes that recall the colors of our flag? Here are some ideas for a complete and tasty tricolor menu.

Tricolour appetizers

Bresaola with cheese fondue and basil spherification : a refined and delicate appetizer, which combines the savouriness of bresaola with the creaminess of parmesan fondue and the fresh scent of spherified basil.

Ingredients:

  • 200 g of bresaola
  • 200 g of Parmigiano Reggiano cheese
  • 200 ml of fresh cream
  • 1 tablespoon butter
  • Fresh basil, salt and pepper to taste

Preparation:

Prepare the fondue: grate the cheese and melt it over low heat in a saucepan with the cream and butter, stirring constantly until you obtain a smooth and homogeneous cream. Season with salt and pepper.

Spherify basil: dilute sodium alginate in cold water and create a solution. Wash the basil leaves, blend and immerse them with the help of a sauce container in the alginate solution to form spheres.

Arrange the bresaola slices on a serving plate, pour the hot fondue over them and decorate with the basil spheres.


Bruschetta tomato mozzarella and basil: a classic of Italian cuisine, simple to prepare and always appreciated, for an extra taste we can use vegetable caponata instead of tomato.

Ingredients:

  • Homemade bread
  • Fresh tomatoes, cherry tomato sauce, caponata
  • Buffalo mozzarella
  • Fresh basil, extra virgin olive oil, salt and pepper to taste

Preparation:

Cut the bread into slices and toast it on the grill or in the oven. Fry the peeled and diced tomatoes in a pan with a drizzle of oil, salt and pepper.

Add the diced mozzarella and fresh basil, stir to melt the mozzarella. Spread the tomato and mozzarella mixture on the toasted bread slices and serve immediately.

Gazpacho or tomato soup with cucumber slices and plain yogurt : a fresh and light dish, perfect for hot days. The preparation is so simple that we will only give you the ingredients, the rest is enough to blend everything and garnish with a spoonful of plain yogurt and bread croutons.

Ingredients:

  • 500 g of ripe tomatoes
  • 2 cucumbers
  • 1 green pepper, 1 red onion, 1 clove of garlic
  • 2 tablespoons extra virgin olive oil
  • White wine vinegar, salt and pepper to taste
  • Plain yogurt and bread croutons

Tricolour first courses

Pasta with tomato and mozzarella: A great classic of Italian cuisine, always appreciated by adults and children.

Ingredients:

  • 350 g of pasta (shape of your choice)
  • 400 g organic cherry tomatoes
  • 250 g buffalo mozzarella
  • Fresh basil, extra virgin olive oil, salt and pepper to taste

Preparation:

Cook the pasta in plenty of salted water. Fry the peeled and crushed tomatoes in a pan with a drizzle of oil, salt and pepper.

Add the diced mozzarella and fresh basil, stir to melt the mozzarella.

Drain the pasta and season with the tomato sauce and mozzarella. Serve immediately with fresh basil leaves.

Cold tricolor rice : A fresh and versatile dish, perfect for a summer lunch or dinner.

Ingredients:

  • 200 g of rice
  • 100 g of cherry tomatoes
  • 100g mozzarella
  • 1 cucumber
  • Black olives, fresh basil, extra virgin olive oil, salt and pepper to taste

Preparation:

Cook the rice in plenty of salted water. In the meantime, cut the cherry tomatoes, mozzarella and cucumber into small pieces.

Combine the cooked and cooled rice, cherry tomatoes, mozzarella, cucumber, black olives and fresh basil in a bowl.

Season with extra virgin olive oil, salt and pepper. Mix well and let rest in the refrigerator for at least an hour before serving.

Tricolour second courses

Meat with green sauce and cheese flakes : a tasty and delicious second course, perfect for lovers of strong flavours.

Ingredients:

  • 400 g of meat (chosen as desired between rump, fillet or other cuts)
  • 200 g of parsley
  • 2 anchovies, 2 capers
  • 1 clove of garlic
  • Extra virgin olive oil, salt and pepper, grated cheese (optional) to taste

Preparation:

Finely chop the parsley, anchovies, capers and garlic in a blender.

Add the extra virgin olive oil, salt and pepper and mix until you get a smooth sauce.

Grill or pan-fry the meat. Serve the meat with the salsa verde and a sprinkling of grated cheese.


Meat with cheese and tomato sauce: a rich and tasty second course, perfect for a tasty treat.

Ingredients:

  • 400 g of meat (chosen as desired between rump or other cuts)
  • 200 g of peeled tomatoes
  • 100 g grated cheese (optional)
  • 1 onion and 1 clove of garlic
  • Extra virgin olive oil, salt and pepper to taste

Preparation:

Fry the chopped onion and garlic in a pan with a drizzle of oil. Add the peeled and crushed tomatoes, salt and pepper. Cook for about 15 minutes, stirring occasionally.

Grill or pan-fry the meat. Pour the tomato sauce over the meat and sprinkle with grated cheese.

Tricolor skewer : A tasty and fun appetizer or second course, perfect for a buffet or a dinner with friends. To maintain the main colors we can use meat that is perfect to be eaten raw or we can cook it normally but only add the mozzarella balls later.

Ingredients:

  • Cherry tomatoes, mozzarella
  • Meat morsels (choice of your choice)
  • Fresh basil
  • Green pepper slices
  • Extra virgin olive oil, salt and pepper to taste

Preparation:

Alternate cherry tomatoes, meat morsels, green pepper slices and basil leaves on a skewer.

We cook on the grill and at the end of cooking we put the mozzarella balls on the stick.

If we want to make the raw version, you just need to insert the ingredients and enjoy accompanied with sauces or fine raw oil.
