Description
The Salva Cremasco DOP from the Taddei dairy is a cheese produced with milk, salt and rennet. The milk comes from certified farms for the production of Salva Cremasco DOP. Produced up to 150 years ago during transhumance, it was used to "save" the surplus of daily milk not used by the family, especially in winter it was often used as money to pay the rent of the lowland pasture; it tolerates long maturations of over 75 days. minimums required by the production specification, reaching up to one year or more.
Raw cheese with washed rind, because during maturation it is subjected to sponging with water and salt to control the mold that develops on the rind and contributes significantly to maturing.
The paste is compact, straw-white in colour, structured but melting on the palate, with a slightly proteolysed undercrust, the rind is wrinkled and consistent, the flavor is lactic with an undergrowth aftertaste and a long persistence.
