Luganega, luganiga or luganica, is a sausage made of pork meat and comes in its typical rolled shape, also called "snail". Although particularly widespread throughout Northern Italy, it owes its name to the ancient Roman district which included portions of Basilicata, Campania and Calabria, originally called Lucania.
Luganega is made from lean pork meat, minced together with a part of fat using a medium-small grain size and then seasoned with salt and spices. In addition to the best cuts of pork, our recipe also includes some Grana Padano and a tasty meat broth.
