Description
The Quartino del Casaro from the Taddei dairy is a traditional cheese produced with: pasteurized Italian cow's milk, salt, rennet. Quartino del casano is a raw cheese with a washed rind. The paste is straw-white in colour, compact but soft and melting on the palate with a marked proteolysis. The rind is smooth and reddish in colour. The mold that develops on the rind, controlled by sponging with saline solution, contributes significantly to the maturation. The flavor recalls the scents of undergrowth, of mushrooms with a truffle aftertaste and a medium persistence.
