Description
Bergamo formaggella belongs to the tradition of this area, it is a semi-cooked cheese produced with pasteurized Italian cow's milk, salt and rennet. The processing takes place by inoculating the milk with the native lacto-graft produced in the company and the semi-cooking of the paste is achieved by adding, when cutting the curd, its whey heated to over 80 degrees C°.
The rind is smooth, the paste is elastic, straw-coloured with holes, the flavor is characteristic with an aftertaste of hay and butter.
