Description
Cotechino with a total weight of 600 g. The local cotechino, frequently called salsicciotto, is a pork sausage composed mainly of rind, meat and bacon, to be consumed after cooking. Created in ancient times to facilitate the preservation of fresh pork, today tradition has it that it is a "good omen" dish, very common in northern Italy and typically consumed on New Year's Eve, accompanied by lentils.
Our cotechino has the particularity of being stuffed with natural pig casing. For this reason, it is good practice to take the right amount of time for medium/long cooking. We at Bovì personally take care of the selection of the animals, their slaughter, the drying and maturing of the cotechino.
