Chuck Roll , the finest cut obtained from the neck of the bovine : in fact the muscles that compose it are the same as the rib. In Italy it is rarely known as a category II rib , but abroad it is highly appreciated, precisely because its tissues are rich in connective tissue and tasty fat.
In the United States, depending on how the muscles are portioned, it may be called more specific names such as Delmonico Steak or Poor Man's Ribeye .
