Instructions for meat stock cubes with the Bimby
Here is the easy recipe to prepare a delicious meat stock cube with the Bimby. Both with vegetables and aromatic herbs, you can choose the ones you prefer to create your own personal mix.
Ingredients:
- 300 g lean Italian beef (in chunks or minced)
- 300 g of mixed vegetables of your choice (carrots, onions, celery, pumpkin, courgettes or turnips)
- 250 g of coarse salt
- 30 g of red wine or water if you don't like wine
- 2/3 fresh sage leaves
- 1 sprig of fresh rosemary
- 1 bay leaf (optional)
- 1 clove of garlic or half a shallot
- cloves or juniper berries to taste (if you like them)
- pepper to taste
A small clarification, I know that the salt may seem like a lot, but remember that the stock cube is a flavoring and with these ingredients we will prepare many concentrated meat cubes.
Instructions for making stock cubes with the Bimby:
Let's start by cutting into small pieces all the vegetables you have chosen for your stock cube.
Place the minced veal in the Thermomix jug and mince for 10 seconds at speed 7. Remove and set aside.
Now place the mixed vegetables cut into pieces in the Bimby jug and chop for 10 seconds at speed 5.
Combine salt, minced meat, wine and spices in the bowl. Cook for 30 minutes at speed 1 in the Varoma.
At the end of cooking, slowly bring the speed to 6-7.
Homogenize the mixture by slowly bringing the speed to 10 and continue for 1 minute.
When it is ready, we can transfer the meat stock cube into sterilized glass jars and let it cool completely. It can be stored in the refrigerator for a few months.
Alternatively, we can spread the mixture in a silicone ice mold and store it in the freezer in ready-made portions.
