How to form the hamburger patty

There are some unwritten and half-codified rules for creating the hamburger patty:

  • The meatball must have a thickness of at least 2.5 cm and a weight between 180/200 g;
  • As a good protagonist, the patty must be slightly larger than the size of the hamburger bun (maximum 1 cm larger in diameter)

To form the patty, you need to divide the meat into equal portions and shape with your hands, giving the meat a circular and flat shape - perhaps creating a very small recess to contain any sauces or condiments under the bun (burger bun).

Remember to moisten your hands often to prevent the meat from sticking and losing its shape. It is important that the patty is of an adequate size compared to the sandwich in which it will be inserted (maximum 1 cm wider).

To obtain a uniform result, you can use a pastry cutter or a specific tool for shaping the burgers. In any case, it is advisable to use your hands to shape the patty in order to compact the meat and make all the ingredients adhere well.

The extra something can be created by adding chopped aromatic herbs or finely chopped red onion or shallots to the mince: everyone can create their own perfect mix.
